Chicken Salad Croissants

Instructions:

  1. Prepare the Chicken: If you don’t have pre-cooked chicken, see the tips below for the best ways to cook it. Ensure the chicken is completely cooled before making the salad. Shred or dice it into bite-sized pieces and place it in a medium bowl.
  2. Make the Dressing: In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, dill, salt, and pepper.
  3. Combine: Pour the dressing over the chicken. Add the diced celery and red onion. Gently fold everything together until evenly coated.
  4. Chill: For the best flavor, cover and refrigerate the chicken salad for at least 30 minutes (or up to 2 days). This allows the flavors to meld and the salad to firm up, making it less messy to serve.
  5. Assemble: Right before serving, slice the croissants horizontally. Line the bottom half with a piece of lettuce (if using), add a scoop of chicken salad, and top with a tomato slice (if using). Place the top of the croissant on and serve immediately.
