Instructions
1. In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
2. Add chopped onion and garlic, and sauté until softened and fragrant.
3. Season with salt, pepper, Italian seasoning, and red pepper flakes if using.
4. Stir in tomato sauce, diced tomatoes, tomato paste, and broth. Bring to a simmer.
5. Add the broken lasagna noodles and cook uncovered for 10–12 minutes, stirring occasionally until the noodles are tender.
6. In a small bowl, mix ricotta, mozzarella, and Parmesan cheeses together.
7. Ladle the soup into bowls and top each serving with a generous spoonful of the cheese mixture.
8. Garnish with fresh basil or parsley and serve hot with crusty bread for the ultimate comfort meal.
